    This sounds like a great recipe! Could I roast the brussel sprouts the day before and then the next day heat them in the oven and then finish the recipe with tossing in the parmesan cheese and sprinkling the pine nuts? Any help is appreciated.

      I've never tried roasting the brussels sprouts ahead and reheating, and truthfully I don't think it will give nearly as good of results as cooking them right before you eat. But if you do try it, I'd love to hear what you think.

    I absolutely ADORE that you're sharing all kinds of green veggies for Thanksgiving. I feel that sometimes, they get lost in casseroles or just completely ignored on Thanksgiving. I am currently DROOLING over your Roasted Brussels Sprouts with Avocado and Pecans. Those look incredible!

    I am so bummed that my family doesn't like Brussels sprouts because I'd make either one of those dishes in a heartbeat. I love the idea of the pine nuts with the sprouts and have always adored avocado. I might just have both on the table since I can't decide which sounds better.

    The first time I went to a Canadian Thanksgiving dinner with my husband's family, I was shocked to find not one single green vegetable dish on the table. Now, most of our holiday dishes are green — a real change for the better.

    broccoli is one of my kids' favorite vegetables (along with cauliflower) – I might just give the first recipe a try for dinner tonight.

    and before I forget – I made your horseradish meatloaf and it was the best meatloaf ever! everybody loved it – including the kids! (it was a bigger hit than a Jamie Oliver chicken recipe I tried the other night…) I'm going to make it again but this time with mustard instead of horseradish and see how it goes.

    So many tempting recipes. And I agree- until you try roasted Brussels sprouts, you can't judge them. They get so sweet and complex when you roast them- especially with balsamic vinegar.

    Another good way to cook brussels sprouts is to cut them in half and lay cut side down in a heated cast iron skillet. Olive oil in the pan, of course. Cook a few minutes on one side then turn them over for a couple of minutes. Very delicious.
